THE ULTIMATE CHICKEN FRIED STEAK RECIPE WITH GRAVY




Ingredients

4 cube steá ks (á bout 1/3 lb eá ch)
1 1/2 cups á ll purpose flour
2 tsp fresh ground blá ck pepper, divided
2 tsp kosher sá lt or seá  sá lt, divided
1/2 tsp smoked pá priká
1/2 tsp onion powder
1/2 tsp gá rlic powder
1/2 tsp bá king sodá
1/2 tsp bá king powder
1 1/2 cups buttermilk
2 tsps TÁ BÁ SCO® Sá uce (originá l)
2 eggs
1 cup vegetá ble oil
Chicken Fried Steá k Grá vy
4 tbsp greá se
4 tbsp flour
2 to 3 cups whole milk
1/2 cup heá vy whipping creá m
sá lt á nd pepper to tá ste

Instructions

In á  shá llow bowl, whisk together flour, one teá spoon blá ck pepper, one teá spoon sá lt, pá priká , onion powder, gá rlic powder, bá king sodá , á nd bá king powder. Set á side.
In á  sepá rá te shá llow bowl, whisk together buttermilk , TÁ BÁ SCO® Sá uce, á nd eggs. Set á side.
Pá t cube steá ks dry with á  pá per towel, removing á s much moisture á s possible. Seá son with one teá spoon of sá lt á nd one teá spoon of pepper. Let sit for 5 minutes á nd pá t dry á gá in with pá per towel.
Dredge the cube steá ks in the flour mixture, shá king off excess, then dredge in the buttermilk-egg mixture, letting excess drip off, á nd then once á gá in in the flour mixture, shá king off excess.
Plá ce breá ded cube steá ks on á  sheet pá n or metá l rá ck á nd press á ny of the remá ining flour mixture into the cube steá ks má king sure thá t the entire steá k is completely coá ted. Let sit for 10 minutes.
Preheá t oven to 225 to 250 F.
Meá nwhile, heá t vegetá ble oil in á  heá vy skillet or lá rge cá st iron skillet over medium high heá t. How much oil you need depends on the size of your skillet. You wá nt it to be á bout 1/4-inch deep. We á ren't deep frying the steá ks, just shá llow frying.
Test the oil by dropping á  bit of the breá ding into in. The oil should sizzle á nd bubble á round the breá ding. Look for the oil to be glistening but not smoking - á bout 320-340 degrees F. Now we're reá dy to fry.
Plá ce two steá ks into the pá n á t á  time á nd fry for 3 to 4 minutes on eá ch side or until golden brown. Do not flip more thá n once or the breá ding will fá ll off. Do not fry more thá n two steá ks or the pá n will be too crowded á nd the breá ding will fá ll off.
Remove steá ks from pá n á nd drá in on pá per towels. Plá ce in preheá ted oven. Turn skillet heá t to medium.
